Walking into the kitchen to find my banana adorning a new outfit of brown speckles sparks a bittersweet feeling. On the one hand, my ruined cereal topping plans make my rumbling stomach all the more apparent. Then, my baking side kicks into gear now having an excuse to whip out the mixing bowls.
Trying to vary my baking cycle, I often search for new recipes online. Other times, sticking to my “oldie but goodie” recipes sounds too good to pass up. The other day I found myself in this exact scenario and decided to stick with the classics.
These Banana Crumb Muffins put over-ripened bananas to deliciously good use. The bananas add moistness while the topping makes them irresistibly impossible to pass up. I’ve been known to cut off and eat just the top, making others in my family quite angry when they go to grab a muffin for themselves.
Quick, simple and made from common ingredients that line cabinet shelves, these muffins turn old bananas into tasty, new creations.
