There’s a new beekeeper in town, and we are all abuzz! After having the chance to try several flavors of pure, raw, unprocessed honey from Bee Raw (a Brooklyn-based company serving up fresh, unique varietals of honey – more than we ever knew existed!) we are SWEET on this up-and-coming company.
Growing up on his family’s Northwestern Pennsylvania farm, Bee Raw Honey Founder Zeke Freeman gained an appreciation for homegrown, artisanal food products. Combining this sentiment with a culinary passion strengthened by years in France working with esteemed chefs like Alain Ducasse, Zeke, together with his wife Marissa, now proudly partners with family owned beekeepers around the country and ships nationwide from their Brooklyn, NY headquarters.
Bee Raw offers so many unique varietals and pairing suggestions that will make honey your newest kitchen cabinet staple. Bee Raw recommends glazing turkey with Cranberry Honey (perfect for Thanksgiving!) or try Blueberry Honey glazed carrots. You can even get the recipe to toast with a Honey Kir Royale! I can’t wait to try this recipe for Spinach Salad with Honey Balsamic Vinaigrette.
I used the cranberry honey to sweeten up some chamomile tea and loved the light, tart fruity flavor it added to the drink. The Meadowfoam honey tasted so naturally decadent with hints of caramel and burnt sugar.

Bee Raw supports local apiaries and features harvests from Central Park, Hell’s Kitchen, The High Line and Harlem. My favorite was the High Line, which I used to pair with some semi-soft cheeses.
