While a culinary tour of 25 countries might be way out of reach, serving up dishes from 25 different cuisines right in your own kitchen proves simple with Chef Maneet Chauhan’s new cookbook. Chauhan takes you on a cultural foods journey that features 25 countries and their cuisines in her newest cookbook, Flavors of My World. An India native, Chauhan adds a little Indian flare and spice to each dish, enhancing the flavors.

Though cooking international cuisine can seem a little more daunting and much more unfamiliar than a classic American meal, Chauhan delivers easy to follow recipes that offer up delicious ingredients and unique flavors—bringing exotic novelties to an approachable place. From Argentina to Vietnam, Chauhan takes aspiring home chefs to international hot spots through delectable dishes. Venture into exotic locales and whip up beautiful, flavorful meals with a seasoned chef by your side. This cookbook opens the door to the foreign treasures of worldly foods for any avid traveler and adventurous cook. Chauhan adds her own variations to the dishes as well, tweaking traditional recipes with ingredients easily found in the local grocery store. Each country in the cookbook has a drink and food recipe to try. The food photography also beautifully captures the colors and detail, leaving your mouth watering for a taste.

A new Mom, author Chef Chauhan graduated with high honors from the Culinary Institute of America and made her mark heading restaurants in New York, Chicago, and now in Nashville. She received the James Beard Award of Excellence for her cooking and is currently a judge on the Food Network’s popular show – and one of my personal favorites – Chopped.

Tandoori ChickenTandoori Chicken

Ingredients:

  • 3 tablespoons vegetable oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon cayenne pepper
  • 1 tablespoon tandoori masala
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 2 tablespoons minced ginger
  • 1 teaspoon salt
  • 4 chicken breasts

Directions:

  1. Heat the oil in a small pan over medium heat. Add the coriander, cumin, turmeric, cayenne pepper and tandoori masala and cook for 2 to 3 minutes until fragrant, stirring often. Cool completely.
  2. Combine the cooled spice mixture with the yogurt in a large bowl and whisk to blend. Add the lemon juice, garlic, ginger and salt and mix well. Add the chicken and stir to coat with the marinade. Chill, covered, for at least 1 hour and up to 6 hours (but no more than 8 hours).
  3. Heat the grill. Remove the chicken from the marinade, shaking off any excess. Grill the chicken until cooked through. Let stand for 5 minutes before slicing.
