On hot summer nights I often feel torn between my desire to grill and the convenience of ordering in for the night. After a long day of work, the temptation to take the easy way out creeps up nearly quieting both my healthy eating conscience and summer grilling obsession.

In moments like these, new, healthy twists on grilling motivate me to put down the phone and fire up the grill. This motivation comes especially easy when dinner cooks up in the less than 15 minutes and has under 500 calories- a match made in my healthy grilling heaven!

Grilled Pita Pizzas have the ability to satisfy any quick cravings in a healthy fashion. Combine a pita with sauce, cheese, and any of your favorite toppings for a grilled up, personalized meal in just minutes! This recipe remains a summer staple in my house as the go-to quick fix meal that doesn’t sacrifice my healthy eating day or empty my wallet. After an exhausting day, my pizzeria grill top welcomes me home and ends the day on a conveniently delicious note.

Grilled Pita Pizzas

Ingredients:

  • 1 pita bread round
  • 1 teaspoon olive oil
  • 3 tablespoons pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sliced crimini mushrooms
  • 1/8 teaspoon garlic salt

Directions:

  1. Preheat grill for medium-high heat.
  2. Spread one side of the pita with olive oil and pizza sauce. Top with cheese and mushrooms, and season with garlic salt.
  3. Lightly oil grill grate. Place pita pizza on grill, cover, and cook until cheese completely melts, about 5 minutes.
