I LOVE French toast, it’s probably my favorite breakfast treat, but with all the calories, sugar and carbs, I usually save it for special occasions.

Luckily, I stumbled upon a great recipe that makes French toast a more feasible breakfast option. With a little less bread, a little less yolk, and an alternative to maple syrup you can have this delicious treat for breakfast without feeling guilty! You’ll fulfill you sweet tooth craving while taking in some protein that will keep you feeling full through the morning.

Guilt-Free French Toast

Ingredients:

  • 1 large egg plus 1 large egg white
  • 3/4 cup canned fat-free evaporated milk or skim milk
  • 1 teaspoon vanilla extract
  • 8 slices of raisin cinnamon wwirl bread or a thin sliced whole wheat low calorie bread
  • 1 teaspoon confectioners’ sugar
  • Fruit toppings

Directions:

  1. In a wide dish, beat the egg and egg white with a fork until smooth. Stir in milk and vanilla.
  2. Set a griddle or large skillet over medium-high heat until hot (about 2 minutes).
  3. Remove pan from heat and coat with cooking spray; turn heat to medium and return pan to burner.
  4. Dip the bread into the egg mixture to saturate. Lift out, letting excess drip off before placing on griddle. Cook until browned and cooked through.
  5. Transfer to plates. Dust with sifted confectioner’s sugar and add some fruit toppings for more flavor.

Serves: 4; Prep Time: 10 min; Cook Time: 32 minutes
