Leftovers, it’s what’s for dinner

Every night I am faced with the same dilemma: what should I make for dinner?

I check the fridge, the cupboards, the pantry, nothing. I don’t even know what I want! Fortunately, I recently came across this website called Recipe Puppy.

Recipe Puppy is a recipe search engine that provides you with suggestions based on ingredients you already have at home. This is a great way to redo leftovers or downsize your pantry. It also saves me a lot of decision-making time!

I went through my leftovers, then back to my computer and plugged in chicken, spaghetti, peas, and chicken broth. After Recipe Puppy fetched me pages of suggestions, I decided to go with Leftover Lo Mein for Two. I omitted the carrots, as I did not have any, but it still tasted delicious! Here’s the recipe:

“Leftover” Lo Mein for Two

Servings: 2

Ingredients:

  • 2 cups cooked pasta
  • 4 tablespoons cooked carrots
  • 4 tablespoons cooked peas
  • 1 egg, scrambled
  • ½ cup chopped cooked chicken
  • ½ tablespoon soy sauce
  • 5 tablespoons chicken broth

Directions:

  1. Combine everything but pasta on stove top and heat until bubbling.
  2. Add pasta and serve.
