Stop & Shop Celebrates 100th Anniversary with Healthy Eating Tips

Mom Central attended an event hosted by Stop & Shop and received two Stop & Shop gift cards at the event.

Where are your decisions to eat healthy on a daily basis made? Believe it or not the decision is made at your point of purchase in the grocery store. You may think about eating healthier while at the gym, at work or dining out, but when it comes to the daily foods you prepare, the decision to eat healthy is made while shopping.

In honor of Stop & Shop’s 100th anniversary the grocery retailer hosted an event to showcase preparing delicious healthy meals with help from Boston’s own renowned chef, Jeremy Sewall, of Island Creek Oyster Bar and Row 34. One of the dishes Chef Sewall taught attendees how to prepare at the event was Whole Wheat Carrot Pancakes with honey and almonds that were absolutely delicious and so easy to make. To prepare these healthy pancakes that can be consumed for any meal – the directions are easy and its something the whole family will enjoy.

Whole Wheat Carrot Pancakes

This recipe serves 4, but certainly can be altered depending on the size of the pancakes you make.


Whole Wheat Carrot Pancakes
Ingredients:

  • 2 very ripe bananas
  • 2 large eggs
  • 1/2 cup of whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup of almond milk
  • 1/2 cup of shredded carrots
  • 1/4cup of toasted almonds
  • 1/4 cup of honey

Directions:

  1. Mash bananas thoroughly. Mix bananas, eggs, flour, salt, milk and baking soda, beat until the mixture is smooth.
  2. Warm a non-stick pan over medium heat, adding a cooking spray or ½ teaspoon of canola oil to ensure the pan is evenly coated.
  3. Pour half a cup of batter into the pan and cook until it begins to bubble. Flip over and heat until it’s cooked through. Repeat with the rest of the mixture.
  4. Serve them warm and garnish with the toasted almonds and a bit of honey.
