Starting the new year right with a healthy breakfast

I’m sure your new year’s resolutions have something to do with eating more healthfully – and getting your family to do the same. One way to do this is by making sure you eat a healthy breakfast.

Even though it’s winter, you can still get healthy summer fruit like blueberries, thanks to growers in Chile exporting them to the US. According to the Chilean Fresh Fruit Association:

  • A half-cup of blueberries packs plenty of fiber, vitamin C, potassium and antioxidants into only 40 calories.
  • Blueberries contain a natural chemical found in laboratory studies to prevent colon cancer.
  • Blueberries contain more disease-fighting antioxidants than red wine or green tea.
  • Half a cup of blueberries a day may help improve brain function plus help prevent Alzheimer’s and dementia according to independent university
    studies.
  • Blueberries not only lower risk of heart disease and cancer, they are anti-inflammatory.
  • Blueberries provide the same bacteria fighters as cranberries to help guard against urinary tract infections
  • Blueberries are considered a “super food” by leading nutrition and medical experts and a recommended diet staple for health, skin care and longevity

It certainly doesn’t hurt that blueberries are delicious, too!

Starting off the morning with blueberries

One way to get your kids to eat more fruit is by making them a breakfast parfait. Prepare them the night before to save time during the morning rush. These also make a terrific, healthy afterschool snack.

To “health it up” even more, use a no-fat yogurt or use a no-fat Greek for even more protein. Also, look for granolas that are low in fat grams and calories, and high in fiber and protein.

Chilean Fresh Blueberry and Orange Yogurt Breakfast Parfait

Makes four 2-cup servings

Ingredients:

  • 1 cup granola
  • 3 5-ounce low fat orange yogurt cups
  • 4 cups fresh blueberries

Directions:

  1. Divide and layer ingredients into four glasses, starting with granola, blueberries then yogurt. Repeat.
  2. Garnish with fresh orange zest.

  • saturated fat 3g
  • cholesterol 9mg
  • sodium 61mg
  • dietary fiber 5g
  • protein 6g
