When winter temperatures remain frigid, nothing feels better than comforting meals that remind you of warmer times, and pairing that with a great wine makes it even better!
This summer I spent some time traveling around the Rhone Valley in France. After too many days bundled up in my heavy winter coat looking at snow, I longed for the memories of being in a sundress, overlooking a vineyard and sipping on an amazing red wine. I knew I needed to take action immediately, and as tempting as buying a plane ticket was, I settled for recreating the experience at home. I love Cotes du Rhone, and I was very excited to make the Chateau Mont-Redon Cotes du Rhone the star of my virtual trip back to France.
I grilled chicken with Herbs de Provence that I brought back from my trip, and roasted winter vegetables. I couldn’t dream of a French-inspired meal without cheese, and I thought the wine made for a great pairing. Every element of the meal brought out the berry and spice notes of the wine.
And because I was fully committed to being decadent and treating myself, I ended my night with dessert of the liquid variety. A glass of Fonseca Bin 27 port was a fantastic way to wrap up a delicious meal. The chocolate and berry flavors of the rich port left me with the satisfying sweetness that I craved. I added a small piece of dark chocolate too as the Fonseca Bin 27 really highlighted the flavors.
