Big Fat Cheesy Shells

Ingredients:

  • 12 to 15 jumbo pasta shells
  • 1/2 cup ricotta cheese
  • 1 1/4 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 tablespoon dried parsley
  • 1 1/4 cups marinara sauce

Directions:

  1. Cook the pasta according to package directions and set aside to cool.
  2. In a bowl, combine the ricotta cheese, ½ cup of the mozzarella cheese, Parmesan cheese, egg, and parsley. Scoop the cheese mixture evenly into the cooked shells.
  3. Spray a 9-by-13-inch baking dish with nonstick cooking spray.
  4. Spread about 1/3 cup of the marinara sauce in the bottom of the pan.
  5. Spoon the remaining sauce over each shell to cover.
  6. Sprinkle the remaining mozzarella cheese over top. Preheat oven to 350 degrees F and bake, covered with foil, for 30 minutes.
