Granola Honey Nut Banana Bread

Ingredients:

  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups brown sugar
  • 1 1/2 canola oil
  • 1/2 cup buttermilk
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon banana extract
  • 1 1/2 cup honey-nut banana granola*
  • 1/2 cup unsweetened shredded coconut
  • 1 cup finely chopped pecans
  • 1 cup ripe mashed banana

*Honey Nut granola can be substituted with Original Granola using 1/2 a cup of honey.

Directions:

  1. Preheat oven to 375 degrees F.
  2. Mix the granola with all the dry ingredients in a large bowl.
  3. In a smaller bowl mix together the buttermilk, the eggs, canola oil, brown sugar. When finished mixing, add the wet ingredients to the dry ingredients in the larger bowl. Mix until well blended.
  4. Add the smashed banana to the bowl and mix until evenly distributed.
  5. Fill a greased baking pan (or two small ones) to about 3⁄4 full. Sprinkle extra granola on top.
  6. Bake for 45 to 60 minutes. Use a cake tester in the center to insure proper baking.
  7. Remove from oven and let the granola bread cools down.
  8. Remove from baking pans and enjoy!
