When mealtime approaches and not a single ingredient has been prepared, I find myself wishing for a faster, easier way to assemble and cook a family dinner. Even as a passionate home cook, I felt intimated by the idea of pressure cooking and often opted for a slow-cooking crockpot. While the results were good, the dishes usually took all day to make. Lemon Herbed Chicken in a Pressure Cooker

Here’s a recipe from Epicurious.com to help you get started cooking with your Sitram pressure cooker.

4 to 6 servings

Ingredients:

  • 3 – 4 bone-in chicken breasts
  • 1 onion
  • 1 tablespoon chopped garlic
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1 cup chopped parsley
  • 1/2 cup chopped celery leaves
  • 2 tablespoon. chopped fresh oregano or 1 teaspoon dry oregano
  • 1 teaspoon chopped fresh basil or 1/2 teaspoon dry basil
  • 1 cup pitted black olives (optional)
  • 2 tablespoons flour (optional)
  • 2 tablespoons cold water (optional)Directions:
  1. Wash chicken and pat dry with paper towels; sprinkle with salt and pepper.
  2. Heat olive oil in a 4 or 6-quart pressure cooker. Brown chicken a few pieces at a time; set aside.
  3. Sauté onion and garlic until tender. Return all chicken to cooker with onion and garlic.
  4. Add remaining ingredients, except flour, water and olives.
  5. Close pressure cooker securely with pressure regulator in place. Cook 10 minutes at 15 pound pressure. Cool cooker at once. Remove to warm dish.
  6. If using olives, add to liquid and heat.
  7. Blend flour and water. Add to hot broth. Cook and stir until thickened. Pour over chicken
